What's the difference between a grill and a griddle?
It's all about the heat. A grill uses direct heat to cook food, while a griddle uses indirect heat. That means a grill is best for cooking food that benefits from a sear, like steak, while a griddle is better for cooking food that doesn't need a sear, like pancakes.
Of course, you can use a grill to cook pancakes (just put a griddle on top of the grill grates), and you can use a griddle to cook steak (just put the steak on the griddle and put the whole thing under the broiler). But if you're looking to cook food the way it was intended to be cooked, you'll want to choose the right tool for the job.
